Professionally, Unai started his football journey in Athletic Bilbao’s Youth system in 2011. He debuted as a senior player with the farm team in the 2014-15 season, in Tercera Divison. On 2 June 2017, Simon became part of the main squad for the pre-season by the new first-team manager. He then signed a contract expansion on 13 July 20018 until 2023.

Unai was recalled by Athletic after he was loaned to Segunda Divison side Elche CF. He made his professional and La Liga debut five days later starting in a 2-1 home win against CD Leganes.

For the 2019-2020 season, the goalkeeper was given the #1 squad number and started the campaign as the first choice. He kept a clean sheet in an opening-day win over FC Barcelona.  Then, Unai missed two fixtures due to illness and completed 33 matches in the league, admitting 29 goals to end third in the Zamora Trophy rankings.

In August 2020, Simon signed a new contract with the club. Talking about his international career, he was elected for Span at under-19 and under-21 levels. Likewise, he was also part of the squad that won the 2015 UEFA European Under-19 Championship.

Similarly, the goalkeeper earned his first call to the senior side on 20 August 2020 for the beginning two matches of the 2020-21 UEFA Nations League.
